Ingredients
For the Risotto:
  • 1 clove garlic, minced
  • 1 tablespoon tomato paste
  • 1 cup arborio or carnaroli rice
  • 4 cups light beef broth (or vegetable broth), heated
  • 1/3 cup grated parmesan
For the eggplant:
  • 1 large eggplant
  • oilve oil
  • marinara sauce
