  • 1 package double-stuffed Oreos (the regular ones aren’t thick enough)
  • 2 bags white candy melts (you really only need about 1 1/2 bags, but oh well)
  • paper lollipop sticks (I like the 6-inch ones)

BAKED MOZZARELLA CHICKEN ROLLS




INGREDIENTS
  • 2 lbs. boneless skinless chicken breasts (8 4-ounce pieces)
  • 1 cup whole wheat Italian style bread crumbs
  • 6 tablespoons grated Parmesan cheese, divided
  • 5 ounces fresh baby spinach
  • 1 clove minced garlic and olive oil for sauteeing
  • ½ cup part-skim ricotta cheese
  • ⅓ cup beaten egg whites (I used something similar to Egg Beaters)
  • 3 ounces fresh mozzarella cheese, thinly sliced
  • 1 cup marinara sauce
  • fresh basil for topping
INSTRUCTIONS
  1. Prep the chicken: Cut the chicken into 8 pieces and pound the pieces until they are thin (for quick cooking) and have expanded in surface area (for more filling). Place the breadcrumbs in a shallow bowl with 2 tablespoons of Parmesan cheese and set aside.
  2. Prep the filling: Chop the spinach and saute it with the garlic and just a drizzle of olive oil for 2-3 minutes or until just barely wilted. Combine the sauteed spinach with the ricotta, Parmesan cheese, and 2-3 tablespoons of the egg whites. Place the remaining egg whites in a separate shallow bowl and set aside.
  3. Assemble the chicken: Oil the bottom of a large baking dish and preheat the oven to 450 degrees. Place one piece of chicken on a flat working surface. Put a spoonful of ricotta-spinach filling right in the middle and roll the chicken up so that the edges meet to form a "seam". Dip the entire chicken roll in egg whites, and then roll it in the breadcrumbs. Place in a baking dish, seam side down. Repeat for the remaining 7 pieces of chicken. Bake for 25 minutes.
  4. Finishing touches: After 25 minutes, the chicken should be cooked through (white on the inside) and browned on the top. Cover the chicken with the marinara sauce and slices of fresh Mozzarella. Bake for another 3-5 minutes or until cheese is melting. Sprinkle with fresh basil.
NOTES
  • Don't try to cram all the pieces too close together because if the sides are touching each other, they won't get crispy. Leaving a little space between each piece allows the breadcrumbs to bake, brown, and crispify perfectly.

  • 1 package Spinach, frozen dry

  • 2 Eggs
Condiments
  • 1 jar Meatless spaghetti sauce
Pasta & Grains
  • 12 Lasagna noodles
Baking & Spices
  • 1/4 tsp Nutmeg, ground
  • 1/4 tsp Pepper
  • 1/4 tsp Salt
Dairy
  • 2 1/2 cups Mozzarella cheese, part-skim
  • 1/2 cup Parmesan cheese, grated
  • 2 1/2 cups Ricotta cheese

Directions
  1. Cook lasagna noodles according to package directions; drain. Meanwhile, in a large bowl, combine the eggs, cheeses, spinach, salt, pepper and nutmeg. Spread 1/3 cup cheese mixture over each noodle; carefully roll up.
  2. Pour 1 cup spaghetti sauce into an ungreased 13-in. x 9-in. baking dish. Place roll-ups seam side down over sauce. Top with remaining sauce. Bake, uncovered, at 375° for 20-25 minutes or until heated through.

Instruсtions

  2. Tаkе еасh triаnglе of сrеnсеnt roll dough аnd plасе аbout 6 pеppеroni on thе bottom of thе triаnglе. Plасе hаlf of а сhееsе stiсk on top аnd roll up. Plасе sеаm sidе down on а сookiе shееt аnd bаkе for 10-14 minutеs or until goldеn brown.
  3. Whilе rolls аrе сooking, сombinе thе mеltеd buttеr, Itаliаn sеаsonings, gаrliс powdеr аnd Pаrmеsаn сhееsе in а smаll bowl.
  4. Whеn rolls аrе donе rеmovе from thе ovеn аnd brush with thе gаrliс buttеr glаzе. Sеrvе with mаrinаrа or rаnсh for dipping.

Pepperoni Pizza Waffles




Ingredients
  • 1 can (16.3 oz) Flaky Layers refrigerated biscuits
  • 8 slices (1 oz each) mozzarella cheese
  • ⅓ cup mini pepperoni slices
  • 2 cups pizza sauce
Instructions
  1. Spray waffle maker with cooking spray; heat waffle maker.
  2. Separate dough into 8 biscuits. Cut slit on 1 side of each biscuit, forming a deep pocket. Place 1 slice of cheese into each pocket. Top cheese with 6 or 7 pepperoni slices. Press dough around edge to seal each biscuit.
  3. Place 1 biscuit on center of waffle maker. Close lid; cook 3 minutes or until waffle is golden brown. Repeat with remaining filled biscuits. Serve with pizza sauce.

The Throgs Neck Bridge is a suspension bridge opened on January 11, 1961, which carries Interstate 295 over the East River where it meets Long Island Sound. The bridge connects the Throggs Neck section of the Bronx with the Bay Terrace section of Queens. It is the newest bridge across the East River and was built to relieve traffic on the adjacent Whitestone Bridge which opened in 1939.

The Throgs Neck Bridge is the easternmost bridge off of Long Island. Due to this and its proximity to both the Cross Bronx Expressway and the New England Thruway, it is the preferred route from Long Island to New Jersey via the George Washington Bridge, upstate New York, Connecticut and other points north and east. Øresund bridge

The Öresund or Øresund Bridge (Danish: Øresundsbroen, Swedish: Öresundsbron, joint hybrid name: Øresundsbron) is a double-track railway and dual carriageway bridge-tunnel across the Øresund strait between Scania (southernmost Sweden) and Denmark.

The bridge runs nearly 8 kilometres (5 miles) from the Swedish coast to the artificial island of Peberholm, which lies in the middle of the strait. The remainder of the link is by a 4 km (2.5 miles) tunnel from Peberholm to the Danish island of Amager. The Øresund Bridge is the longest combined road and rail bridge in Europe, and connects two major metropolitan areas: Copenhagen, the Danish capital city, and the major Swedish city of Malmö.
